I haven’t been eating the best since I came home from vacation and today I tried to make an effort to eat some healthy things. Here they are:
I made this salad with romaine, spinach, celery, carrots, bell peppers, chickpeas, feta cheese, hummus, avocado and lemon juice and salt and pepper. If you mash the hummus all around it makes for a really good time! And hummus with lemon juice makes a great dressing for your salad!
This brown rice cake creation is one of my favorite snacks/treats. DANGER! Justin’s chocolate almond butter is amazing! I mixed it with fresh ground honey roasted peanut butter from whole foods. Can’t we all just get along?! YES we can! And we did!
I had some Red Raspberry leaf tea before bed (as I write this post). The brand is Yogi tea, which had this quote on the tea bag.

It makes plenty, and I loved it on top of Wendy’s chopped raw broccoli, cauliflower, red pepper & currant salad. I also mixed in some 100% soba (buckwheat noodles), along with some teriyaki baked tofu–for one delicious take-to-work lunch!

Ingredients1 (21 ounce) can cherry pie fililng1 (14 ounce) can sweetened condensed milk1 (8 ounce) can crushed pineapple, drained1 (8 ounce) container Cool Whip4 ounces cream of coconut1/2 cup chopped maraschino cherry1/2 cup chopped pecans (optional)Directions1In a large bowl, combine cherry pie fililng, condensed milk, pineapple, Cool Whip, cream of coconut, cherries and pecans.2Mix well and chill several hours.
